Story
Vineyard
The historic Yount Mill Vineyard sits on the floor of Napa Valley, just north of the town of Yountville. The site has been farmed for over 100 years by one of Napa’s pioneering families. It’s a warm site that maintains cool nighttime temperatures, which allows us to harvest early for acidity but still achieve riper flavors. Farmed organically since 1987.
Winemaking
We loaded the grapes whole-cluster into a stainless steel tank, which we then topped with CO2 and sealed to initiate carbonic maceration. We drained the free run from the tank daily to minimize extraction from the stems. After 10 days of carbonic maceration, we pressed the grapes, fermented the wine to completion in stainless, and then racked it into neutral French oak barrels to age for 4 months.
